Ingredients

    1 Can Black Beans
    1 Can Diced Tomatoes
    1 Can creamed Corn
    1 lb lean Ground Beef
    1 cup shredded Cheddar Cheese
    1/2 cup Chopped Onion
    8 tsp. Spanish Garden's Taco Seasoning
    1 Box Jiffy Corn Bread Mix
    1/3 cup Skim Milk (for corn bread)
    1 large egg (for corn bread)

Directions

Preheat oven to 400

Brown ground beef and drain.

Add everything except the cornbread mix, milk, and egg to the beef.

Place in 13x9 casserole dish

Prepare corn bread mix according to direction on box.

Pour corn bread mix over the beef mixture in the Casserole dish, be sure not to mix.

Bake for 15-20 or until the cornbread is golden brown.

Allow to cool for 15 minutes before cutting.
