Introduction

This is my daughter's favorite salad. This is my daughter's favorite salad.
Number of Servings: 6

Ingredients

    1 cups long grain white rice
    2 1/2 cups water
    1 cup frozen peas
    1 cup of julienned carrots
    1/2 cup cucumber cubed
    1/2 cup green onions (green only) chopped
    1/2 cup of oil and vinegar dressing (add more if it is too dry!)
    Salt and pepper to taste

Directions

Cook rice according to directions. Add frozen peas once the rice has cooled slightly, then add the julienned carrots and dressing. Let chill approximately 1 hour in the refrigerator before serving. Add cucumbers cubes and chopped green onions just before serving, Add salt and pepper to taste.

Makes approximately 6 1-cup servings
