Introduction

This is a delicious, clean out the fridge, kind of soup. The veggies are really up to you! I like peppers and squash the best, but whatever you have on hand will work. Ingredients

    1 lb Jennie-O Hot Turkey Italian Sausage
    1 lb Jennie-O Italian Seasoned Ground Turkey
    2 T butter
    1 green pepper, diced
    1 red pepper, diced
    1 medium red onion, diced
    3 cloves of garlic, minced
    1 yellow squash, diced
    1 zucchini, diced
    28oz Diced Tomatoes with Garlic, Basil & Oregano
    28oz Tomato Sauce
    28oz Water
    2 cans of Cannellini beans
    2 cups ditalini pasta, dry

Directions

Remove casings from sausage and brown with ground turkey meat. In separate large pot, sauté peppers, onions and garlic in butter. Season to taste (I use Tastefully Simple Season Salt). Do not cook all the way because the veggies will continue to cook while the soup simmers. Add squash and zucchini, diced tomatoes, tomato sauce and water. Stir and bring to boil. Add the meat, beans and dry pasta. Simmer for at least 30 minutes. Make sure pasta is fully cooked before serving. Top with parmesan cheese before serving.
