Ingredients

Chicken- 3 boneless, skinless chicken breast (I use the spices in my spice rack to season this chicken)
Redskin potatoes- 4 medium chopped potatoes
Avocado- 2 small Haas avocados diced
Milk- .5 cup 1% Milk
Butter- (I Can't Believe It's Not Butter Light Spread) 2 tbsp
Mango- 1 juicy mango
Kiwi- 1 small kiwi
Pineapple- .5 cup of chunky or crushed pineapples
Roma tomato- 1 medium diced tomato
Cilantro- 3 tbsp of chopped cilantro
Lime- .5 a lime squeezed
Salt- dash
Pepper- dash
Directions
Serving size: Makes 3-4 servings
Preheat oven at 400 degrees.
In a large pot add chopped redskin potatoes and fill with water til water is above potatoes. Boil potatoes on medium-high and boil til soft enough to mash.
While potatoes boil, prepare chicken. In a swallow 9 x 13 casserole dish, place chicken in dish and add your favorite seasonings to the chicken. Bake chicken for 30 minutes.
While chicken is baking, prepare mango salsa. Dice mango, red onion, kiwi and tomato and add in a medium size bowl. Also add 1/2 cup of pineapples, chopped cilantro, dash of salt and pepper. Squeeze lime on top and gently start mixing. When done mixing, place mixture in refrigerator to marinate.
Potatoes are soft enough to mash, drain water and place potatoes in a mixing bowl. Add diced avocados, butter, milk and salt & pepper to potatoes. Mash together until potatoes are whipped enough.
Pull chicken out of oven when done cooking and start plating your food. Put a scoop of avocado mashed potatoes down first and place a piece of chicken on top. Then finish dish with a 1/2 cup of mango salsa on top.
