Number of Servings: 3

Ingredients

    1 cup white rice
    2 cups water
    1 cup salsa (I use medium, mild will not have enough flavor)
    1 can of black beans
    1 cup of frozen yellow corn

Directions

Put all ingredients together in a pot and bring to a boil. Lower heat and simmer with cover on until the rice is fully cooked. It's great by itself, or you can serve it with fat free sour cream and shredded cheese to top.

Serves 2-4 depending on how hungry you are, I usually make it for 3

    I found that this recipe was too bland for my taste until I added some red pepper flakes and 1/2 ounce or so of marble cheese (mozza/cheddar mix) . - 11/11/08
