    3 lbs potatoes, sliced
    1 lb carrots, sliced diagonally
    1 small onion sliced
    2 T. unsalted butter
    3 T. flour
    1 t. salt
    1 t. dry mustard
    pepper to taste
    3 c. skim milk
    2 c. 2% cheese (cheddar or colby works best)


Place potatoes, carrots and onions in a large pot. Cover with water and cook until the potatoes are almost done. Drain.

Meanwhile, in medium pan, combine butter, flour and spices over medium high heat. Cook, stirring constantly, for about 3 minutes. Add milk, and continue stirring until thickened. Add cheese and remove from heat.

In large casserole, layer 1/2 the ham, 1/2 the veggies, 1/2 the sauce; repeat.

Bake at 375 for about 30 minutes, until potatoes are soft and sauce is beginning to brown.

Makes 12 servings.
