Ingredients

    Large Head of Iceburg lettuce
    1 cup carrots (chopped)
    1 cup celery (Chopped)
    1 cup onion (chopped)
    1 cup broccoli (chopped)
    1 cup cauliflower (chopped)
    1 cup radishes(sliced)
    1 cup cucumber (sliced)
    1 can Dark red kidney beans
    1/2 cup Taco Cheese (2% milk)

    1/2 cup Salsa
    1/2 cup Reduce Calorie Thousand Island Dressing

    1 cup crushed Tortilla Chips

Directions

Mix all vegetables, beans, and cheese together

Mix Salsa and thousand Island together and use as dressing for the salad

Add the crushed chips just before serving to retain crispness.
