    12 oz. turkey italian sausage
    1 yellow bell pepper diced
    1 green bell pepper diced
    1/2 cup chopped onion
    2 t. tomato paste
    2 t. garlic, minced
    1/2 cup dry white wine
    2 cans diced tomatoes (28 oz.)
    2 t. sugar
    red pepper flake (to taste)
    salt (to taste)

    serves 4

    1/4 cup chopped fresh parsley
    grated parmesan

    serve with:
    whole wheat penne rigati


1. Remove sausage from casings. Brown in a large saute pan over medium-high heat for 5 minutes, crushing it into small pieces.
2. Add bell peppers and onions to sausage, brown for 5 more minutes.
3. Stir in tomato paste and garlic. Saute for 2 minutes, stir frequently.
4. Deglaze with wine, then increase heat to high and cook until liquid is nearly evaporated. Add tomatoes, sugar, and pepper flakes; bring to a simmer and cook 5-8 minutes or until thickened.
5. Season with salt. Serve over pasta, garnish with parsley and parmesan.

  • I didn't have the green bell pepper nor the dry white wine so I substituted a yellow bell pepper and red wine and it was delicious. - 10/25/07
