Ingredients
-
2 Tbsp Butter, unsalted
1 Garlic Clove
1 Cup Arborio Rice, uncooked
1/3 Cup White Wine
1 Cup Prawns, medium, rinsed
5 Spears Asparagus
1 Cup Water
1 Cup Organic Lemonade
Directions
Over medium heat, melt butter and sauté garlic in large saucepan. Add arborio rice and stir constantly until coated and butter has absorbed. Add in wine and stir constantly until wine has absorbed.
Reduce heat to medium-low and add 1/2 cup of broth (water and lemonade mix) and stir constantly until broth has evaporated. While this round of stirring, add the asparagus and prawns.
Continue adding 1/2 cups of broths and stir until broth has absorbed until adding the next 1/2 cup.
Rice should be tender at this point. Gradually add the parmesan and stir until cheese has melted.
Remove from heat and serve. Add a sprinkle of parmesan on each dish as garnish (optional).
