Ingredients

2 medium Zucchini, sliced
1 cup Onions, chopped
3 cloves of garlic, minced
1 Can Diced Tomatoes
1 can of White beans, drained
2 1/2 cups Whole Wheat Penne Pasta, dry
2 tablespoons of dry vermouth
2 teaspoons of dried oregano
3.5 oz. Athenos Reduced Fat Feta Cheese, divided
Salt and pepper to taste
Directions
Begin cooking penne pasta according to instructions on box. Be sure to drain pasta about one minute before it's fully cooked and set aside.
On medium heat, coat a large sauce pan with cooking spray and add the zucchini and onion. Cook, stirring occasionally for 5 minutes, or until slightly browned. Add garlic and cook one minute longer.
Add tomatoes and vermouth. Reduce heat. Add beans once the liquid has reduced by about one third. Stir in beans, oregano and penne. Allow the ingredients to heat through for 2 minutes more.
Season to taste with salt and pepper. Sprinkle approx. 2 tablespoons of feta cheese onto each serving of pasta. Serves 5.
