Ingredients

    1 Chicken breast half with skin

    Chicken rub:
    Cayenne Pepper
    Garlic powder
    Ginger powder
    Salt
    pepper

    For salad:
    2 Cups Bok Choy, cut into strips
    6 Fresh strawberries, sliced
    1 Persian cucumber, sliced
    1 green onion, finely sliced
    sprinkling of sesame seeds
    spritz of Asian Silk Salad spritzer

Directions

Preheat oven to 415.

Preheat oven proof saute pan on the stove to medium high.

Assemble rub and apply generously to Chicken. Spray pan. Place chicken in pan, skin side down, allow skin to crisp and get golden - 2-4 minutes. Flip chicken and put pan in oven for about 20 minutes, or until deepest part of thigh reaches 160-165 degrees.

Assemble salad beautifully between two plates. Seasoning with salt and pepper, if desired and spritzing as you go.

Allow cooked chicken to rest for five minutes then slice. Divide between plates and enjoy!

    Is the nutritional information correct if the skin is left on? It seems like maybe a chicken breast without skin would be better and contain less fat. Anyone have any idea how that might alter the final calories/fat ect? Thanks! - 1/19/11

    It would be less calories, by all means take it off. For me, however, I tend to cut the fat so much that I am always short of my goals. Long term, it isn't a pretty thing for my hair and brain function. Per serving, without the skin, you save an additional 35 calories. Hope that helps!
