Introduction

Low calorie pumpkin muffins that taste great and are quite filling. Low calorie pumpkin muffins that taste great and are quite filling.
Number of Servings: 12

Ingredients

    1 3/4 C whole wheat flour

    3 T sugar

    2 t baking powder

    1/2 t cinnamon

    1/2 t allspice

    1/4 t baking soda

    1/8 t salt

    1 large egg , beaten

    3/4 C light soy milk (you can use skim milk also)

    2 T apple sauce

    3/4 C pumpkin

Directions

Preheat oven to 375 degrees. Oil or spray the muffin pan. In a large bowl, combine dry ingredients. In a smaller bowl, combine egg, milk, and apple sauce. Slowly stir the wet ingredients into the dry until they are well mixed. Add the pumpkin. Bake muffins for 15-18 minutes.

Makes 12 muffins.
