Ingredients

1 TBS extra virgin olive oil
1 small onion, chopped
2 medium scallions, chopped
1-1/2 tsp. fresh ginger, minced
1 TBS coriander seeds
1 TBS cumin seeds
1 tsp. turmeric
1 tsp. salt
1-14.5 oz. can stewed tomatoes
1 cup/serving dikon, cubed
2 small sweet potatoes, peeled and cubed
1 medium head cauliflower, cubed
Directions
Makes 4 servings.
Heat oil in large pan.
Add onions and ginger. Cook until onions translucent.
Stir in all four spices and toast about 15-20 seconds.
Add tomatoes, dikon, & sweet potatoes.
Cook until the potatoes are tender on the firm side, about 13-15 minutes.
Add cauliflower, mix well, cover and cook about 8-10 minutes.
