Ingredients

4 large onions, thinly sliced
2 cloves of garlic
1 pint of vegetable stock made from stock cube (apologies but can't find stock cubes in the food lists)
2 tablespoons of curry powder (add or take away to your taste)
2 small cans chick peas drained and blended to a paste
1 medium egg
spray oil
Directions
makes around 8-10 bhajis.
1. 'dry fry' the onions and garlic in the pint of stock in a large heavy based frying pan until the onions are softened. add a small amount of salt and pepper to taste.
2. add the curry powder to the pan and mix thoroughly. fry for a further 5 or 6 mins.
3. meanwhile, mix the egg into the blended chick pea paste in a large high sided bowl.
4. add the cooked curried onions to the chick pea mixture and mix in thoroughly with a spoon.
5. preheat the oven to 180 degrees, gas 7.
6. spray 2 metal oven trays using a low fat cooking oil spray.
7. spoon out the onion mixture with a tablespoon onto the metal trays and flatten slightly so the bhajis are around 1 1/2-2cm thick.
8. spray the bhajis with the low fat oil spray and bake in the oven for around 20-30 minutes until set and slightly hardened on the outside.
great hot or cold, on their own or with a yoghurt and mint dip.
