    1 1/4 C SUGAR
    1C GRATED RAW ZUCCHINI
    1 TSP VANILLA
    1/2 TSP BAKING SODA
    1 1/2 C ALL PURPOSE FLOUR
    1 1/4 TSP CINNAMON
    1/2 TSP BAKING POWDER
    1/2 TSP SALT
    NUTS, RAISINS, CHOCOLATE CHIPS, ETC ARE OPTIONAL

    I SUBSTITUTE HALF SPLENDA FOR HALF OF THE SUGAR (1/2 SUGAR AND 1/2 SPLENDA) I ALSO USE 1/4C UNSWEETENED APPLE SAUSE AND 1/4 C OIL INSTEAD OF ALL THE OIL.

Directions

COMBINE ALL INGREDIENTS , MIX WELL
PUT IN A GREASED AND FLOURED BREAD PAN.
BAKE AT 350 FOR 1 HOUR
MAKES ONE LOAF
