Introduction

Kelp noodles are my new favorite food. With only 6 calories per serving!! I have been trying new recipes with this wonderful noodle. This stir fry is one of my favorites with the kelp noodles!! Hope you give it a try and tell me what you think ☺

Oh a great bonus with this dish is that you save a little time because you don't even have to cook the noodles before hand. All you do is rinse them off and throw them in the pan!!

Number of Servings: 4

Ingredients

    1 lb chicken breast thinly sliced
    1/2 onion chopped
    1 small zucchini chopped
    1 small head of broccoli chopped
    1 c sliced fresh mushrooms
    3 tsp. garlic finely chopped
    2 T extra virgin olive oil
    1 T soy sauce
    1 Package of Kelp noodles (12 oz)
    2 Tablespoons water or veg or chicken broth


Directions

Sautee garlic in olive oil. Add chicken and vegetables. Sautee until chicken is cooked. Add Kelp (make sure you rinse them off first) noodles, soy sauce and some water or broth. Stir until noodles are to your desired tenderness, i like mine soft so I keep them on a little longer. Add salt and pepper to taste and more soy sauce if desired.

This recipe makes a ton and could easily be a 6 serving dish which would be 161 cal per serving.

    Very Good
    I loved this recipe because I am strictly Paleo Eater. I loved the kelp noodles. Those are awesome. The chicken was definitely a little bland, so it should be seasoned with something asian. Instead of soy sauce, I used Gluten free tamari sauce. I highly recommend trying this cuz of the noodles. - 6/8/12

    I was looking for the other rating, even though it shows a rating and there are none. This is a good recipe and it was worth making. Jazz it up with 5 spice, red pepper flakes, tamari instead of soy and even a nut butter. But as is, is good! - 6/3/12
