Ingredients

    8 cups water
    1 package assorted beans(dry) packet discarded
    1 lg onion chopped
    3 stalks celery chopped
    2-3 cloves garlic minced
    2 lg carrots sliced
    2 lg potatoes cubed
    4 cups smoked ham cubed
    1 can diced tomatoe in juice (14.5oz)
    2 cans chicken broth (14.5oz)
    1 tsp salt
    2 tsp pepper
    1 tsp garlic powder
    parsley
    italian seasoning
    basil
    fresh spinach (optional)

Directions

Remove seasoning packet from beans and set aside. Soak beans overnight. Rinse and drain beans. Place all ingredients, except spinach in large kettle. Simmer at least 4 hours until beans are tender. Season to taste, use packet if desired. Just before serving add spinach and let heat through until wilted.
