Most of my crockpot recipes are like this: I have chicken, I have other stuff, I throw it in the pot and cook it and hope I like it. I usually do. This one is particularly good and hearty. Ingredients

    1.5 pounds boneless, skinless chicken breasts (mine were frozen)
    2 medium sweet potatoes, cooked, peeled & diced
    1.5 cups cooked spaghetti squash
    1 can organic butternut squash (pureed)
    4-5 cloves roasted garlic
    1 chicken bouillon cube prepared with 1 cup water
    1 tbsp pepper
    1 tbsp poultry seasoning
    3 tsp half salf
    2 tsp nutmeg
    1 tsp allspice

Directions

In a large crockpot or slow cooker, toss in the chopped sweet potatoes, spaghetti squash and garlic. Place chicken breasts on top and sprinkle with spices. Dump the can of pureed squash on top of the chicken and pour the mixed chicken broth over the top. Cook on low for 6-8 hours or on high for 4-6 hours. Shred the chicken breasts when cooked through and mix well.

Adding onions, apple sauce or other root veggies would work really well in this dish and would make the calorie difference per serving negligible.

Makes 8 servings!
