Ingredients

    1 small can tuna, drained
    4 scallions
    3 cloves garlic
    2 T fresh parsley
    2 T capers
    16 oz spaghetti
    1 T butter
    2 T olive oil
    1 can diced tomatoes (~16 oz)
    1/2 cup white wine
    2 tsp dried basil
    1 tsp dried oregano
    1 tsp Italian seasoning
    Seasoning to taste
    1/2 cup grated Parmesan cheese (if desired, not included in nutritional data)

Directions

Cook the noodles until almost tender. Drain and chunk the tuna. Trim and chop scallions, peel and mince garlis, chop parsley, rinse capers. Melt the butter with 1 T of oil in a large skillet, add the scallions and garlic and saute 2 minutes. Add tomatoes, wine, capers and seasonings and cook until slightly reduced, 3-5 minutes. Drain pasta and return to stock pot and toss with the remianing 1 T olive oil. Add tuna and parley to skillet and stir to mix well. Toss pasta with sauce and sprinkle with Parmesan cheese.
