Ingredients

1 cup whole wheat flour
1/2 cup spelt flour
1/2 cup oat flour
1/4 cup flax meal
1/4 cup whey protein concentrate powder (Bob's Red Mill)
1/2 cup brown sugar, packed
1/2 cup granular splenda for baking
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground ginger
1 tsp. ground nutmeg
1 tsp. ground cloves
1 tsp. ground cinnamon
1/2 tsp. ground cardamon
1 1/2 cups (or more) unsweetened pumpkin (fresh or from can....but not pumpkin pie mix!!)
2 eggs
2 egg whites
4 oz unsweetened apple sauce (1/2 cup)
1/3 cup raisins (60 grams)
Directions
Preheat oven to 350. Soak raisins in hot water to plump; drain.
Combine dry ingredients in large mixing bowl (whole wheat flour thru cardamon) . In separate bowl, combine pumpkin, eggs, egg whites, & apple sauce. Add wet ingredients to dry; mix then add raisins.
Prepare muffin tins with cooking spray or use foil liners. Fill tins 2/3rds full. Cook at 350 for 20 minutes. Makes 18 muffins, 112 calories each.
