Introduction

Another South Beach Super Charged recipe. The original only calls for 0.25 tsp of each spice, but I double those to add a nice kick of flavor. Also, I doubled the amount of squash and tomato sauce (calls for an 8 oz can) and cut back a little on the water to make it a bit thicker. Made about 8 cups, so a nice 2 cup serving will really fill you up. If you need to cut sodium, use a smaller can of tomato sauce and really rinse your beans, or use frozen beans instead. Ingredients

    1 tbsp EVOO
    3/4 cup chopped onion (1 small)
    2 celery stalks, chopped (about 1/2 cup)
    2 cloves garlic, minced
    1/2 tsp each dried basil, oregano, and red pepper flakes
    5 oz white mushrooms, trimmed and quartered (about 1 cup once trimmed and cut)
    2 medium summer squash, diced
    1 can (15 oz) lima beans drained and rinsed (yields 1.5 cups once drained)
    1 can(14 oz) no salt added diced tomatoes
    1 can(15 oz) tomato sauce (
    3/4 cup water

Directions

In a medium saucepan, heat oil over medium heat. Add onion, celery, garlic, and spices and cook, stirring occasionally, 5 minutes. Add mushrooms and squash and cook 5 minutes more, stirring occasionally. Stir in beans, tomatoes, sauce, and water. Bring to a simmer and cook until heated through.

    This recipe is very healthy and great to look at! The seasonings combo didn't suit my family. I don't like spicy, my husband does, and neither of us cared for this recipe. - 3/30/11
