Ingredients

    3/4 cup coconut oil melted
    1/2 stick (1/4 cup) butter
    1/2 cup brown sugar
    1/2 cup white sugar
    1 egg
    1/4 cup water
    1 teaspoon vanilla
    1 cup whole wheat flour
    1 teaspoon sea salt
    1/2 teaspoon baking soda
    dash of cinnamon and/or nutmeg
    3 cups uncooked regular oatmeal

Directions

Bake at 350 degrees for 10-12 minutes. Be sure not to over bake or they will be crispy I like my cookies chewy. You may find you want to even bake them for less time! For variety, add chopped nuts, raisins, carob chips, or coconut.

    Love this recipe! I've made these cookies at least 10 times for my family and everyone loves it! Even my extremely picky best friend who wards off healthy foods like he would a plague. I like to grate white chocolate over mine after baked =) thank you for sharing the recipe! - 1/3/13
