great light lunch or supper. Could add grated carrots to the saute mix for more color and vitamins, or peas at the end (or both!) Ingredients

    .5 cup lentils,
    6 tbls chopped onion
    1 cup beef bouillon
    3 cloves garlic crushed
    water as needed
    1 tbls light olive oil
    2 cups cubed winter squash. I like Butternut.

Directions

saute onion and garlic in olive oil. add all to rice cooker and turn on. When it goes off stir. If not creamy, add water and cook more until creamy and lentils are very soft.

If you don't have a rice cooker, cook on the stove top, covered, until everything is soft and creamy, adding water as needed.
