Introduction

Ingredients

    2 1/2 cup flour
    1 1/4 cup sugar
    3 tsp cinnamon
    2 tsp baking soda
    1/2 tsp salt
    3 eggs
    3/4 cup apple sauce
    1/2 cup canola oil
    1 tsp vanilla
    2 cups grated carrot
    1 med tart apple peeled & grated
    1 can 8oz crushed pineapple drained
    1/2 cup coconut flakes
    1/2 cup chopped pecans or walnuts

Directions

In a large bowl combine first 5 ingredients. In another bowl combine eggs, applesauce, oil & vanilla. Stir into dry ingredients until just moistened. Stir in apple, carrots, pineapple, coconut & nuts. Fill each cupcake pan 2/3 full of batter. Bake at 350 for 20-24 min. Yield 2 dozen.
