Introduction
A lower carb, higher protein spaghetti dish A lower carb, higher protein spaghetti dishNumber of Servings: 4
Ingredients
-
1 box Nutrition Kitchen Whole Soybean Pasta
1 can Campbell's Tomato w/basil & oregano soup
1 pkg Veggie Ground Beef
1/2 cup chopped mushrooms
3/4 cup chopped bell peppers
1/4 cup chopped onions
Directions
Start boiling water for the pasta. Put all the veggies in a pan and sauté them until starting to get tender, then add the veggie ground beef. Add your pasta when the water starts boiling and cook according to package directions.
While the pasta is cooking, and the veggies are nearly done, add in the soup and mix, adding water or vegetable broth to get a good sauce consistency.
Spoon the sauce over the finished pasta and serve.
This makes 4 servings, so make sure to equally divide the sauce and pasta into 4 to insure there is enough sauce for the pasta.
Enjoy......
Alterations... use veggie meatballs instead of the ground beef, also you can add some nutritional yeast to make the spaghetti a bit more cheesy.
To reduce the calories and carbs in this recipe, you could add just a plain can of tomato sauce and add some herbs to it.... I just like this soup as a spaghetti sauce....
