Introduction

I took a delicious Oatmeal Cake recipe from a dear friend of mine, (other wise lovingly refereed to by her as "Spit" cake") and I converted some of the items to make it more "calorie" friendly!

Number of Servings: 12

Ingredients

    *Quaker Oats - Quick 1 Minute - Dry, 1 cup
    Water, tap, 1.5 cup
    *Salt (table), .5 tsp
    Baking Soda, 2 tsp (split between cake and icing)
    *Flour Self-rising, 1.5 cup
    Vanilla Extract, .1 tsp
    Buttermilk, lowfat, .5 cup
    *Corn Syrup, Karo, 1 tsp
    egg whites, fresh, 2 large, or 1/2 of egg beaters
    *Ground Cinnamon, 1 tsp
    *Splenda Brown Sugar Blend 1/2 Cup
    *Smart Balance Light Buttery Spread w/ Flax Oil, 8 tbsp (1/2 cup)
    *Splenda Sugar Blend for Baking, 1 cup (split between cake and icing)

Directions

Take 1 1/2 cups of boiling water and add 1 cup oats. Set aside.

In a bowl mix:
1/2 cup Splenda Sugar Blend for Baking
1/2 cup Splenda Brown Sugar Blend
1/2 teaspoon salt
1 teaspoon soda
1 teaspoon cinnamon
1/2 cup Smart Balance Light Buttery Spread with Flax Oil
1- 1/2 cups of self rising flour
2 egg whites
1 teaspoon vanilla.

Add oats and mix with a spoon well.
Pour into a greased and floured 9 X 12 pan
Bake at 350 for 35-40 min.


BUTTERMILK ICING

1 teaspoon soda
1/2 cup Splenda Sugar Blend for Baking
1/2 cup buttermilk
1 teaspoon of Karo syrup

Put in a pot and bring to boil.
Stirring constantly; so it won't stick.
Pour over cake as soon as you take it out of the oven
The frosting will seep through into the cake.
Make 4 cuts width wise and 3 cuts length wise, to make 12 servings.
