Since I love spinach and I love alfredo, I decided to see if I could create a "company worthy" dish. Let's put it this way, Mom, who's usually kind of picky, scraped her plate until she had every bit of it! Ingredients

    1 tbsp extra light olive oil
    2 tsp chopped or minced garlic
    1 can (12 oz.) evaporated non-fat milk
    1 tsp white or black pepper
    1/2 - 1 tsp nutmeg
    1 package fresh spinach
    1 tsp corn starch (optional)
    2 oz shredded romano cheese

Directions

Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and saute` about 1 minute.
Add evaporated milk, pepper and nutmeg. Bring the mixture to a boil and let it cook until reduced so that the milk coats the back of a spoon.
Add the cleaned, washed and dried spinach to the pan and cover.
Cook for about a minute with the cover on, then uncover and stir.
If the sauce seems thin, add 1 tsp of corn starch that you have mixed with a little bit of water, stirring constantly. Cook for a minute more, add the cheese, stir, and pour over you favorite pasta.

    I made this twice today.. I it didnt taste like alfredo to me, not to say that to some it doesnt but i followed the recipe to the "t" and it doesnt seem cheesy.. like alfredo.. its rather thin even with the thickener.I was really excited about this one, but i didnt care for it at all didnt eat it :( - 11/17/08

    Incredible!
    Loved it! I followed your directions exactly and waited until the milk reduced and coated the spoon. Added the romano and, when serving, the cheese stretched in ribbons from the spinach. My son wanted more! (So did I.) Thank you! - 1/14/21

    I made this last night to put on some ravioli. My family just loved it and said it was a keeper. I also added some onions and also thickened with the suggested cornstarch. It was thinner than regular alfredo. If you want it thicker just add a little more cornstarch. - 3/10/12

    Very Good
    I liked it, was hoping for something more alfredo like but I may have failed at getting it to set right as I have no experience with making my own. Next time I want to add mushrooms and onion - 9/18/11

    Incredible!
    This was an incredibly delicious meal. My whole family loved it. In fact, my husband and son fought over who got to have the one serving of seconds that were left. And my son asked me to make it again asap. - 4/24/09
