Introduction

Ingredients

    3 large tomatoes, chopped into 1x1 pieces
    1-2 chopped arugula
    2 TB olive oil
    pinch sea salt
    pinch black pepper
    pinch (depending on how much kick you want) red pepper flakes
    brown rice pasta
    grated Parmesan cheese

Directions

heat olive oil with chopped garlic and red pepper, add tomatoes and saute, add salt and pepper.

In the meantime cook your pasta as directed on the label. Drain once it is cooked.

once the tomatoes are cooked down and they've created a bit of a sauce (still with some chunks) add arugula, mix and let it wilt. mix in cooked pasta.

Sprinkle with grated cheese.
