Introduction

This was a family favorite when I was growing up and us kids would beg for it whenever we were given the choice.

It's a simple addition to any breakfast and, if light bread and margarine are used with a zero-calorie sweetner and sugar blend, it helps to make this an acceptable substitute to the high calorie, high fat pastries that are common in the morning.

Ingredients

    Aunt Millie's Healthy Goodness Light Whole Grain Bread - 8 slices
    Country Crock, Shedd's Spread Country Crock Light (Soft) - 8 Tbsp
    Splenda No Calorie Sweetener - 8 tsp
    Cinnamon, ground - 2 tsp
    Granulated Sugar - 8 tsp



Directions

Pre-heat oven broiler.

Line baking sheet with aluminum foil (this not only improves crisping of the toast, the aluminum foil can be recycled and makes clean-up of the stray carmalized sugar a breeze).

Use 1/2 Tbsp Country Crock Light Spread per slice of bread to cover one side evenly, making sure the butter goes all the way to the edge to avoid premature burning, then lay bread on baking sheet, butter-side up.

Spinkle 1 tsp Splenda and 1/4 tsp cinnamon evenly on the buttered side of each piece of the bread.

Finish by sprinkling 1 tsp sugar on each piece of bread covering all the way to the edges. This will enhance the crunchy coating on the toast after the sugar carmalizes during broiling.

Place in oven for 2 1/2 to 3 minutes. Monitor closely as the edges can burn in as little as 15 to 30 additional seconds.

Suggestions - Nutmeg or AllSpice can be added to or substituted for cinnamon for a little more "rustic" flavor.

Makes 8 slices.
