Introduction
Fast to make, delicious to eat! I used twice as much chicken as the recipe called for to cut down calories & fat per serving, and cut the mayo in 1/2. You could probably make this with 1/2 the butter too and it would still taste good. Fast to make, delicious to eat! Ingredients
-
.25 cup Hellmanns olive oil mayonnaise
1.5 cups Panko bread crumbs
3 lbs boneless skinless chicken breasts
1 cup cheddar cheese
2 tbsp butter
.5 cup flour (there will be about .25 cup leftover)
pepper
1 can cream of chicken soup
Directions
Heat oven to 425 degrees.
Use a 9 x 13 pan, coating lighly with cooking spray to keep chicken from sticking.
Put the 3 tbsp. of butter in a medium bowl & set aside to soften.
Sprinkle pepper on chicken breasts. Put flour in a large ziplock back and add chicken, one piece at a time, and shake to coat. Place each coated piece of chicken in baking pan.
In a small bowl, combine cream of chicken soup with mayonnaise. Spread this mixture evenly over top of chicken breasts.
In the medium bowl with the softened butter, add shredded cheese and Panko crumbs. Using your clean hands, mix ingredients together until crumbly. Add to top of chicken.
Cover pan with foil and bake at 425 for 10 minutes. Remove foil and bake another 10-15 minutes, or until chicken is 160 degrees and topping is golden brown.
Remove from oven and serve! Makes 6 servings.
