Introduction
Inspired by the numerous awesome pumpkin recipes on here. I saw similar recipes for pumpkin muffins but not for bars, which was what I wanted.Delicious with a dollop of whipped cream. Stays a little softer on the inside thanks to all the pumpkin. :)
Feel free to substitute splenda for the real sugar, egg beaters for the eggs, etc. I used what I had.
Also: I prefer a nice amount of spice in my bars, but reduce the cinnamon and pumpkin pie spice if you don't! Inspired by the numerous awesome pumpkin recipes on here. I saw similar recipes for pumpkin muffins but not for bars, which was what I wanted.

Ingredients
-
wet ingredients:
1/2 cup sugar
2 eggs (use egg whites if you'd like)
2 cups canned pumpkin
2 tbsp pear butter (you can substitute apple butter, apple sauce, or leave out altogether)
1 tsp vanilla
1/2 cup skim milk
dry ingredients:
1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1.5 tsp pumpkin pie spice
pinch of salt optional, not included in this nutrition info
Directions
Makes 12 servings - cut smaller if you want more pieces and fewer calories each piece! :)
----- PREHEAT OVEN TO 350! -------
1. Mix eggs and sugar, using whisk or electric mixer, until they are smooth.
2. Add pumpkin, pear butter, milk, and vanilla and mix until smooth.
3. Separately, combine dry ingredients (whole wheat flour, baking soda, baking powder, and spices). Mix until blended well.
4. Combine dry ingredients with wet ingredients and mix until smooth.
5. Using 9x13 baking dish or similar. (http://s7.thisnext.com/media/230x230/Pyrex-9-x-13-baking-dish_EA2562A3.jpg)
Pour out batter and spread so that it covers the entire baking dish.
6. Bake for 30 minutes at 350, checking in the last five minutes to be sure it does not get overdone. (My oven is old and imprecise so I am never 100% sure I have gotten exactly 350 degrees - so make sure it's ready with a toothpick or a butter knife!)
7. Cut into 12 (or more) pieces and dig in!
