Introduction

I didn't include nuts in the recipe even tho my original one suggest them (toasting pecans-1/2 c. I believe). Also, it suggests you top the muffins with 1/4 tsp of brown sugar. Ingredients

    sweet potatos -cooked and mashed (2 cups)
    buttermilk- 1 cup. (non-fat milk with 1 tbsp vinegar is what I use)
    applesauce-1 cup
    raisins-half cup
    flour-2 cups
    sugar-1 cup
    cinnamon-1 1/2 tsp.
    baking powder-1 1/2 tsp.
    baking soda-1 1/2 tsp.
    salt-1 tsp.
    3 egg whites
    2 whole eggs


Directions

This receipe usually makes 27 muffins or so, depending on how full you fill them. Use liners or the baking spray either one. Cook at 350., normally 22 to 24 minutes. Mix the sweet potatos (cooked and mashed) with the applesauce, buttermilk (or soured milk), 2 whole eggs and 3 egg whites. In another bowl mix the flour, sugar, cinnamon, baking powder & soda and salt. Make a well in the dry ingredients and stir the wet ingredients in with as few strokes as possible. Add raisins and they suggest toasted nuts (which I never use). You can top each muffin with 1/4 tsp of brown sugar. That is not calculated into the ingredients because I don't use it.
