Ingredients

    4 cups (one package) dried Pinto beans
    Ham Hock - small-ish
    1 teaspoon salt
    1 teaspoon vinegar
    Water to cover + 2 inches

Directions

rinse beans, put in pot, add water to cover plus 2 inches, add ham hock and one teaspoon salt (I used kosher). When they have cooked for 90 minutes, check water level and add more water if necessary. Also, add a teaspoon of vinegar. Cook for another 90 minutes (3 total hours).

    Very good. I had never used ham hock before, and I found this recipe when searching how to make it! I loved the flavor of the beans. Note: Cook time is based on high crockpot setting. I wasn't sure about that when I started. :) - 3/27/11
