Introduction

Very easy and good way to use bumper crop of sweet potatoes. My grandson would live off this pie is allowed.
Very easy and good way to use bumper crop of sweet potatoes. My grandson would live off this pie is allowed.

Number of Servings: 16

Ingredients

    2 cups cooked sweet potatoes
    3 eggs
    1 stick margerine
    1 sm can evaporated milk
    2 cups sugar
    2 tsp. cinnamon
    2 9" pie shells

Directions

350 degree oven. approx 1 hour. Makes 2 pies. I freeze one for the day I don't have time or inclination to bake. 6 large pieces or 8 med. size slicesper pie.

Peel and cut sweet potatoes. Cook in salted water until tender ( about 10 to 15 mins.). Drain and add butter and sugar. Beat until creamy. add evaporated milk, cinnamon and eggs. Mix well. Pour into pie crusts, bake approx 1 hour until knife inserter in center comes out clean. Place on wire rack to cool. cut and enjoy.
