Crust:
Butter, salted, 0.25 cup
Coconut Oil, 2 tbsp
Coconut Flour, 16 tbsp
Egg Yolk, 2 large
Honey, 1 tsp
kosher salt, 0.1 tsp
Coconut Shredded, 8 tbsp
Filling:
Egg Yolk, 2 large
Egg, fresh, 2 large
Lime Juice, 0.5 cup
* fat free sweetened condensed milk 14 oz can, 14 oz
*lime rind, 1 serving
Directions
Crust:
In a medium sized bowl cut the butter and coconut oil into the coconut flour until mixture resembles irregular pea sized clumps. Add remaining ingredients except egg white. Mix together with your hands until a soft dough has formed. Pat dough into a 9 inch pie pan. Bake at 350 for 8 minutes.
Filling:
Place 2 eggs and 2 egg yolks in a bowl; beat with a mixer at medium speed until well blended. Add juice and condensed milk, beating until thick; stir in rind. Spoon mixture into prepared crust. Bake at 350° for 20 minutes or until edges are set (center will not be firm but will set as it chills). Cool completely on a wire rack. Cover loosely, and chill at least 2 hours.
