Ingredients

    1 pound turkey breast cutlets
    Stuffing:
    1 Cup stuffing mix
    1/3 cup water
    2 tbsp butter or margarine
    1/2 cup chopped raw carrots
    1/4 cup chopped raw onions
    2 cloves garlic, chopped
    1/2 cup chopped mushrooms
    1 slice roasted red pepper chopped and drained
    2 slices honey ham chopped
    1 tbsp extra virgin olive oil
    1/4 to 1/2 tsp hot sauce

Directions

Preheat oven to 350 degrees. Pound turkey breasts to 1/4 inch thickness. Prepare stuffing: Boil 1/3 cup water with 2 tbsp butter and add dry stuffing mix; stir until moist and set aside. Heat 1 tbsp olive oil over medium heat and add carrots, mushrooms, garlic, onions, and ham. Saute until mushrooms soft and onions translucent. Stir in hot sauce and chopped roasted peppers. Add to stuffing. Lightly salt and pepper cutlets (optional) and put 1-3 tbsp stuffing in each cutlet and roll them up; secure with toothpicks. Place in casserole dish lined with aluminum foil. Bake at 350 degrees for 35 minutes. Serve with fat free turkey gravy or cranberry sauce (optional)
