I'm not a bread pudding fan but this simple recipe tastes more like french toast bites and satisfies a sweet tooth while keeping me closer to my Clean Eating nutrition plan. Ingredients

1 cup unsweetened applesauce
1 cup nonfat milk
1/2 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
10 slices whole wheat bread (day old or lightly dried in oven while preheating)
1/2 cup peeled, chopped apple
3 teaspoons rapidura/raw sugar
Directions
Preheat oven to 325. Combine applesauce, milk, brown sugar, eggs, vanillan, cinnamon and nutmeg. If using fresh bread, lay individual slices on cookie sheet and dry in oven while oven is preheating. Take out of oven and cool prior to adding to egg mixture. Cube bread, peel and slice apple. Add bread and apple to mixture.
For thinner pudding, use 9X11 baking dish, for more height, use an 8 in square baking dish. Lightly spray cooking spray in baking dish, pour mixture into dish. Sprinkle rapidura over top. Bake, uncovered, at 325 for 35 to 40 minutes or until toothpick inserted near center comes out clean.
Serve warm or cold.
