Ingredients

    12 Egg Whites
    1 Red Pepper
    1/2 Large Onion
    1/2 Package Frozen Spinach (thawed)
    2 Italian Turkey Sausage Links (pre-cooked) Leave out for vegetarian choice.
    1 cup Reduced Fat Cheese

Directions

Pre-Heat oven to 350 degrees. While oven is heating you can cook sausage, cut veggies and seperate eggs.(I pre-cook the sausage and keep in the freezer, then thaw when needed. As well I keep pre-cut veggies in the fridge. Doing these little steps and having items easily on hand really help to put great meals together quicker, and help me to stay on track to make healthier choices) After eggs are sperated beat and add all ingredients except for cheese. Spray the bottom of an 8x8 baking pan with cooking spray or lightly rub with olive oil and pour mixture into pan. Cook for approximately 40-45 minutes, you'll know it's done when middle is no longer wet and jiggley. Top with cheese and allow to melt. Once melted cut into squares. (Another tip: I like to make up 1 or 2 of these up on the weekend, cut up and put into seperate containers and whalah, I have my breakfast done for the week!)
