Number of Servings: 4

Ingredients

    20 oz of chicken (I cut into 8 fillets)
    2 TSP Canola or Olive Oil

    Marinade:
    1/2 Cup Lemon Juice
    4 TBSP white vinegar
    1 TSBP poultry seasoning
    1 TSP crushed red pepper flakes.

    Filling:
    4 oz fresh goat cheese
    1/2 cup artichokes (or other veggie like spinach works well)
    4 cloves of garlic crushed
    salt and pepper as desired (Keep in mind goat cheese is salty)


Directions

Mix all marinade ingredients and marinade for 15 mins or more if desired.
Cut chicken into fillets and pound. I cut into 8 fillets.
Spread goat cheese evenly among all fillets, then add some crush garlic and artichokes. Roll and close end with toothpick.
Heat oil in a pan and place chicken until it gets crispy on all sides, about 10 minutes.
Bake at 375 degrees for 15 mins or so. Just watch to make sure you're not drying it. Baste with juices from chicken a few times as it bakes.

Yields 4 servings (2 pieces per serving)
