Introduction

Ingredients

    1 cup of cooked spaghetti squash
    6 cherry tomatoes
    1/4 cup of shredded (part skim) mozzarella
    seasoning to taste (garlic powder, basil, etc)

Directions

Cook the spaghetti squash: microwave about 1 - 1.5 minutes to soften, then slice in half lengthwise, remove seeds. Place cut side down in a pan of water (1/2 inch) and bake at 350 for about 35 minutes, till inside is soft. Let it cool a bit, then scrape out the strings of cooked squash.
Now you have squash to eat and enjoy different ways.
For this recipe, I take my serving in an individual microwaveable bowl. Make sure the squash is shredded up nicely. I cut the cherry tomatoes in halves or quarters, mix those in. Season to your liking, I use garlic powder and a little basil. Then stir in the shredded mozzarella. Microwave till heated through and cheese is melted.
