Ingredients

    4 cups cooked instant brown rice
    1/2 medium diced onion
    1/4 cup frozen peas and carrots
    1/4 cup soy sauce
    1 large egg
    2 tablespoons canola oil

Directions

In a large skillet, place 1 tablespoon of oil to get hot over med-high heat. Scramble egg, stir-frying to make sure it's good and broken up. Put it into your serving bowl for holding.

Put the other 1 tablespoons of oil in the skillet and fry the onion until almost transparent.

Add the peas and carrots, stir-frying to thaw and heat through.

Add the hot cooked rice to the skillet and add the egg. Pour in the soy sauce.

Toss ingredients over med-high heat stirring until the soy sauce is well distributed.
