Introduction

Ingredients

    1 lb. diced lamb
    1 lb. diced potatoes
    15 sliced baby carrots
    1 large onion coarsely cut
    1 tsp salt
    1/4 tsp. freshly ground black pepper
    1 tbs. dried rosemary crushed
    1/3 c. flour

Directions

Mix flour, salt, pepper and rosemary in a plastic bag. Add diced meat and shake until meat is covered. Meanwhile heat olive oil in pressure cooker over med. high heat. Add meat and stir until lightly browned. Add all vegetables and stir well for about 2 minutes. Add three cups of hot water and stir. Put lid on pressure cooker. When the pressure regulator starts to rock, cook for 12 minutes. Cool under running water until steam dissipates. Put back on stove and add any remaining flour mixture to thicken stew. To add flour, put in small bowl and add enough broth from stew to make a semi thick past. Serve for a satisfying fall or winter meal.
