    1 Squash Spaghetti - 1000 gr

    1 tbsn Olive oil*
    3 garlic cloves*
    Fresh basil/Cilantro*

    1 Medium Tomato (diced)
    1 Medium Onion (chopped)
    1 Large Red Pepper (chopped)
    herbs (fresh - to taste)
    1/4 C Plain 0% Fat Source Yogurt
250 gr Extra Lean Ham (Cooked and diced)

I use my roasted herbs and garlic...

1. Preheat oven to 350 degrees F. Spray wa baking sheet, or line with foil.

2. Place squash face down on baking sheet, and bake for 25-35 minutes, or until sharp knife can be inserted with little resistance. Remove squash from oven and cool enough to handle.

3. Meanwhile, heat oil in a wok over medium heat. Saute onion and garlic together until tender. Stir in tomato and ham. Heat until warm.

4. Using a spoon or fork, scoop stringy squash meat and add to the mix. Toss with sauted vegetables. Reduce heat to Low. Add salt/pepper (to taste) and the yogurt. Toss and serve immediately.
