Ingredients

1 package of hot Italian turkey sausage
1 box of bowtie or other pasta, cooked
4 cans of diced tomatoes with garlic, basil and oregano
    1-2 tbsp. Fresh cilantro, diced.
    Italian spices to taste

Directions

1. Thoroughly cook Italian sausage until no longer pink. Drain.

2. Add tomatoes (with liquid) and simmer together to let flavors meld.

3. Add cilantro, approx 1-2 tablespoons (you shouldn't taste the cilantro, it just helps the flavors mix).

4. Add Italian spices to taste.

5. Once satisfied with the tomato/sausage flavor, add to cooked pasta and serve.

Halved the recipe using diced tomatoes Italian style, added a couple of cloves of chopped garlic, 1/4 c diced onion, 1 c green pepper, 1/2 c yellow peppers for added veggies since I am alone and still had some to freeze. Did not use Cilantro. - 6/21/11
