Introduction

Yummy for breakfast with soymilk or lowfat cottage cheese. If you prefer a "saucier" version, retain 1 &1/2 cups of the lemon water with the pears & sprinkle a tblsp. of cornstarch over them when mixing in spices (not included in nutritional data). Ingredients

    Pears, fresh Bosc or similar, peeled & cubed, 6 cups
    Cardomom, Ground, 1 tsp.
    Orange Peel, 1 tsp.Agave syrup, 1 tbsp.
    Cinnamon, ground, 1/2 tsp.
    Vanilla Extract, 1 tsp.
    Agave Syrup, 1 tbsp.
    Rolled Oats, 2 cups
    King Arthur White Whole Wheat Flour, 1 cup
    Molasses, blackstrap, 1 tbsp
    Xylitol, 1/2 cup
    Smart Balance Buttery Spread, 1/2 cup
    Salt, 1 tsp.

Directions

Makes 12 slices.

Peel & chunk pears into large bowl with juice of 1/2 a lemon & 2-3 cups of water, tossing chunks to prevent browning. When finished, drain water & add cinnamon, cardomom, orange peel & agave syrup, tossing until all chunks are evenly coated. Spread evenly in 9x12 baking pan sprayed lightly with cooking spray.

With a fork, mix together flour, oats, salt & xylitol until well blended; drizzle molasses over the oat mixture & continue mixing with fork until fairly well distributed. Add buttery spread & using hands, work well into the dry mixture until completely blended & crumbly. Distribute evenly over pears, patting down lightly.

Bake at 350 degrees 40 minutes or until pears are done to your liking. Slice into 12 portions.
