Ingredients

    1 package (1.25 lb) ground turkey
    1 medium red onion, diced
    1 cup celery, diced
    3 tablespoons whole-grain flour
    2 cups low-sodium chicken broth or bouillon
    1 10-ounce package mixed vegetables (corn, carrots, green beans)
    4 medium potatoes (about 1 pound)
    1/3 cup soy milk
    2 tablespoons Smart Balance Plus buttery spread
    Black pepper to taste

Directions

Start 1.5 quarts of water boiling to cook the potatoes. Slice the potatoes into smallish (1-inch) chunks and let them cook while you prepare the meat mixture.

Preheat oven to 325 degrees F.

Brown the ground turkey. Add the onion and cook until onion softens (but does not become transparent). Add the mixed vegetables and flour, stir, then add the broth and stir again. Cook over medium heat until completely heated through.

Spoon the meat mixture into a 3-quart casserole. By now the potatoes will be mashable. Drain the potatoes and add the soy milk and Smart Balance. Spoon the potatoes over the meat mixture and place in the preheated oven. Cook for 10 - 15 minutes until the top of the potatoes becomes golden brown.

Makes about six, 1-1/2 cup servings of 365 calories apiece. If you use 1 cup servings, enter .667 servings into your nutritional planner.
