Introduction

Wonderful, easy, crockpot soup. I usually freeze my leftover roast beef and drippings and freeze it until I am ready for a quick throw together crock pot soup. Also, freezing the leftover drippings makes it really easy to discard the excess fat. My family loves it. Wonderful, easy, crockpot soup. Ingredients

    1lb - Leftover Beef roast (cut into bite size before freezing it)
    1 medium Zucchini
    3 cups Canned Tomatoes
    .5 cup leftover beef stock (from roast)
    1 cup chopped carrots
    2 cups chopped Celery
    2 tsp Worcestershire Sauce
    1 medium onion
    8 cups Water
    Season to taste with salt & pepper, garlic powder and italian dried herbs

Directions

Put all ingredients into Crockpot and add the Water last and fill to almost the top. depending on your size of crockpot, it should be about 8 cups.
Cook on high setting for about 6 hours or until veggies are soft.
