Ingredients

    1 Joseph's Flax, Oat Bran & Whole Wheat Lavash Flatbread, cut into thirds
    2 c. Fresh Baby Spinach leaves, torn
    2 c. Egg Whites, beaten
    1/2 c. Onion, chopped
    Cayenne Pepper, to taste
    1/2 tsp. Course Sea Salt, divided (more or less to taste)

Directions

Preheat oven to 375 degrees. Prepare a metal loaf pan with light coating of cooking spray. Sprinkle a small amount of sea salt into the bottom of the pan. Cut the Lavash bread into thirds, placing one third on the bottom of the pan. Layer one cup of spinach followed by 1/2 cup of onions and one cup egg whites. Place a second piece of Lavash bread in the pan, layering again with the remaining spinach, onions and 1/2 cup egg whites. Top with the final piece of Lavash Bread and the remaining egg whites, spreading the egg whites to coat the bread. Sprinkle top with Cayenne Pepper and the remaining sea salt. Bake on center rack for 35-40 minutes. Loosen from sides of pan and slide out onto plate, cut in half... ENJOY!

    Very Good
    This is a great idea and has given me some other "casserole" type ideas for lavash bread. I think Lavash bread is God's gift to dieters! It definitely keeps me from ever being hungry as I lose weight. Thanks for this! - 3/6/12
