Ingredients

    2 Sweet Potatoes dice these
    2 Tbsp chopped Shallots or Green Onions
    2- 3 cloves of Garlic
    2 Tbsp Olive Oil
    2 tsp Curry Powder
    1 tsp Turmeric
    1/4 tsp Cinnamon
    1 tsp Cayenne Powder
    1/2 of a Red Sweet Pepper, chopped
    1 12-oz can Vegetable/Chicken broth

Directions

Chop up about two sweet potatoes raw, set these aside. Brown garlic, shallots in olive oil. Reduce heat and add spices, stir until fragrant. Add sweet potatoes and vegetable broth simmer until potatoes are tender. May need to add more broth while simmering. Serve with warm brown or white rice.
Makes 4 1-cup servings
