Introduction

Versatile and Kid Friendly meal that uses cooked chicken breast and Souffer's frozen Spinach Souffle to make a rich-tasting dinner. - Great as an appetizer and can be vegetarian by leaving out the chicken. Ingredients

    Cooked chicken. About 2 cups
    2 oz (1/4 C) Light Cream Cheese or Neufchatel Cheese
    1/2 of 12oz container of Stouffer's Spinach Souffle, (frozen food section)
    1/4 C minced Onion
    1/4 C grated cheese (figured for cheddar-- Parmesan actually better)
    Reduced Fat Crescent Roll dough

Directions

Preheat oven 325
Roll out dough and create 8 squares-- You will need to press together the break lines and then cut the dough into 8 rectangles.( i.e.create 1 large square with two crescent triangles, then cut this large square into two smaller rectangles or squares.)

Remove 1/2 of the frozen spinach souffle from the package (I let it thaw a room temp for about 10min, then cut the still-solid souffle in half using a paring knife.) Place in microwave bowl. Add the cream cheese and "nuke" for about 1min. Mix cream cheese and souffle well.

Add remaining ingredients and divide into 8 parts. Place mixture in center of dough square(s). Bake about 30 minutes.

Can freeze before baking. This is an easy recipe to double and have 2 meals with little extra work.

This is a GREAT party appetizer-- just make the packets smaller. (16 servings instead of 8).

Calories figured for 8 Packets - 1 packet/serving. However, we usually have 2/person as a meal.
